"It's Beginning to Look a lot Like Christmas"

You may be laughing at the this post considering that Halloween hasn't even happened... But there has been so many Christmas things that I have been seeing lately and I cant help but smile and feel so happy when seeing or hearing Christmas things. This past Wednesday is when it all started. I turned my itunes on shuffle while I was doing my homework and the first song that started playing was Bing Crosby's Jingle Bells. Normally I just skip over the Christmas songs when its not Christmas time but hearing this particular song made me so happy so I kept listening to it. About an hour later I logged onto Spotify and right there on the front page was Michael Bubles Christmas album.I didn't even know he was coming out with a Christmas album so I got so extremely happy when I found out. I then listened it it and fell in love with all the songs instantly. This is my kind of Christmas Album. 



   Then Later that evening I was watching some youtube videos and then watched this hilarious Christmas caroling video. Check it out if you want a good laugh. It has nothing to do with Michael but it is Christmasy. 


Hope you enjoyed this little preview post of Christmas time :) You have no idea how happy I was to listen to Christmas music. Christmas time gives me the best feeling. I am just so happy. 

Battered Chicken


So the other day I found this wonderful recipe over here. I have always been wanting to find a good fried chicken recipe so I could make some chinese restaurant style chicken. I tried this recipe out and it really did turn out great! I plan on saving this recipe. 

Battered Chicken
1 ½ lbs boneless skinless chicken breasts (cut into 1” chunks)
Oil (for deep frying)
Batter-
4 tablespoons cornstarch
¼ cup flour
1 teaspoon baking powder
½ cup water
½ teaspoon salt
1 egg
1 egg white

Mix all the batter ingredients together. Cover it and let it sit for 15 to 30 minutes. Cut the chicken in to small strips or cubes. Heat the oil in a pan to 350 degrees. After the batter has sat for at least 15 minutes dip the chicken in the batter and gently set in the oil for frying. Fry for 3 minutes on each side. Serve with any kind of sauce. I made up my own with oyster sauce, soy-sauce, honey, brown sugar, and garlic. Serve with rice or vegetables and it makes for a great meal!

Waterfall Twist


Check out my hair! My very nice roommate wanted to try and experiment on it. She kind of made it up. Its kind of like the waterfall braid but just twisted hair instead of braided. I think it turned out very cute! I am going to try and learn how to do this now.

This Week

Check out a few things that I have been up to this week. I have actually had time to do a few things that I have wanted to do since school isn't terribly busy this week. Tonight my roommate Lauren Painted my nails for me! Didn't she do a great job. I got the idea from Pinterest which led me to this website! I thought they turned out pretty darn cute! 




Another thing that I got to make this week was some whole wheat bread! This was my first time making whole wheat bread and I thought it turned out delicious. I got the recipe from Pinterest. 


My roommate and I also made a delicious dinner a couple nights ago. We made a healthy version of breaded shrimp and man I really loved them! We are for sure going to try to make them again sometime. I got the recipe from this wonderful blog! It has so many great recipes for healthy dishes.

Wonderful Weekend

This past week last minute I decided to take a trip down to Colorado. It was such a great decision! I flew down on Thursday and met some of my family. We stayed with some good friends. We got to shop, eat out a lot, go to the BSU vs CSU football game and just enjoy the company of friends. It really was a great break from school that I needed. 

  
We laughed so hard at dinner. We were trying to balance our spoons on our noses. I was pro but Jord wasn't that great. I love being around my little brother Jordan. He is always making me laugh so much

Pumpkin Bread

Well I am on day 6 of trying to eat no sweets. Can I tell you that it is one challenging thing! I have an extremely sweet tooth so I am always looking for something sweet that is not filled with tons of sugar. I also love to cook and bake so I have been looking for sugar free recipes. I found this great pumpkin bread recipe that actually turned out pretty good. There is no sugar but there is honey to sweeten it. Just put a little butter on it and it makes for a wonderful fall treat or breakfast. 


Whole Wheat Honey Pumpkin Bread 

1 ½ cups whole-wheat flour
1 ½ teaspoons cinnamon
1/8 teaspoon ground cloves 
1 teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon salt
2 eggs
½ cup oil
½ cup honey
½ teaspoon vanilla
1 cup pumpkin puree

Directions:Preheat oven to 350 degrees.In a large mixing bowl whisk together the dry ingredients (from the flour down to the salt).Make a well (hole) in the center and throw in the eggs, oil, honey, and vanilla. Stir together thoroughly with a fork, but do not over mix.Fold in the pumpkin puree.
Spray the bread pan with cooking spray and then pour in the batter.
Bake for approximately 30 – 40 minutes or until a toothpick inserted comes out clean.
