Well what an exciting week it has been! I started a new semester and I just keep getting great news in my life. First off the first 2 days of school have been good. I am taking 15 credits this semester so it shouldn't be too stressful. I am taking textiles, an education class, food science, home and family management, and a Humanities class. I am pretty excited about learning this semester! I really really am hoping to get straight A's this semester, so lets just hope it will happen :) I know I can do it with lots of hard work. 

So on to the good news of the week. I went to talk to my advisor on Tuesday and guess what I discovered????? I will graduate this December :) It made me so happy to hear this great news! So this means I will be doing my student teaching in January next year and then I can get a real teaching job Fall of 2012. This is actually making me kind of scared. That means I am really going to have to grow up and be responsible and have a real life job and try to teach kids. pretty scary stuff. 

So another exiting thing that happened today was I received a $20 gift certificate to Kiwi Loco, the local yogurt shop I told you about last post. I love this place. We also went last night, does that tell you how much we love it? If you are a Rexburger I would suggest it. 

More exciting news is that I decided to do Cupcake Wednesdays and cook a new kind of cupcake every Wednesday.I will post pictures and recipes for you all. 

My lovely roommate Dawna made the cupcake for the day. They are these beautiful easter cupcakes (sorry, pictures are from my phone so not the best quality). This is how she made them... just make some regular chocolate cake batter from a mix. Pour the mix into the cupcake tin. Add a Reese's egg to each cupcake and bake at directed temperatures and times on the cake mix box. When cooled frost with *cream cheese frosting, sprinkle some green died coconut and put a few Cadbury eggs on top. 
*Cream Cheese Frosting 
1 8oz package of cream cheese
1 stick of butter softened 
about 4 cups of powdered sugar 
vanilla to taste 
1 Tbsp of milk if to hard 

Mix all ingredients to the desired consistency and enjoy this burt of heavenly deliciousness. 

How is your week going? any good news for you?



It was definitely a Spring day here in Rexburg! It got into the 50's haha. But really it was so nice out. The roommates and I decided to go for a walk and a bike ride this evening. It felt so nice to finally be outside instead of cooped up inside, like we have been all winter.
While on our walk we stopped at a new yogurt place in Rexburg called Kiwi Loco. It was so delicious! 
 Then we road our bikes on down to the park and played on the mary go round, swings, and slide. We felt like kids again! 

I love that it is finally getting warm out! I am seriously so excited for summer so I can do things outside more often. It will be so wonderful! 


Here are some pics from the weekend! I had a blast in Utah for a girls weekend with my sister, mom, cousins, and Aunt! 

This was an art exhibit that we visited at BYU. We thought this stack of books was so cool! We also went to the Carl Bloch museum at BYU. It was so amazing to see his original artwork of Christ. I loved it.

We also ate so much delicious food during the weekend! We visited the cutest cupcake shop called The Sweet Tooth Fairy  where I ate this...
It was so chocolately and delicious. I loved every bite of it.

Well it was a great weekend. I loved seeing my mom and getting to spend time with my cousins. Nothing beats spending time with family! 



I officially decided Sundays are my favorite day of the week. They are so relaxing. On this particular Sunday I was in Salt Lake city. I was able to go to The Spoken Word. It is a broadcast of the Mormon Tabernacle choir. It was such a beautiful performance. I loved it. It definitely started my day out with the spirit. 

Then we toured around temple square. I have been there many times before but this time I loved it more then ever. I love the Salt Lake Temple, it is sooooo beautiful. It is my favorite temple. 

I love the Gospel of Jesus Christ so much. I am so happy to be a member of this gospel. I love to feel the spirit! and I know I feel it so strongly on Sundays in particular. I love the calming music, reading church articles, the scriptures etc. This church seriously brings me so much happiness and is making my want to become a better person daily. Love it :)

Weekend Update

What a wonderful weekend it was! It was seriously so relaxing. It was general conference for my church, So most of Saturday and Sunday I got to listen to wonderful talks that were so inspiring and  motivating for me to become a better person! I loved every minute of it!I seriously love being a member of The Church of Jesus Christ of Later Day Saints. To learn more go here

Other then watching conference I sewed...
This is just a preview to what I am sewing... You will have to wait and see the end project. Hopefully I get it finished within the next two weeks.

I cooked lots of delicious food... 

These are Kale Chips
I have seen them online a lot and finally I thought I would try them. To be honest when I saw them the first couple of times they sounded like they wouldn't be good at all. But I then read that many people thought they were delicious and even kids liked them. I had some kale so why would I not at least try them? So I did and man oh man they were great!They were crunchy and salty just like real chips. Here is how I made them 
3-4 bunches of Kale
Olive Oil

rip the Kale in to little bite size pieces. Place on a cookie sheet. Drizzle with olive oil and toss around on pan until they are fully coated. Sprinkle salt on top. Cook in a 300 degree oven for about 20 minutes. 
They really are delicious! I even tried them with some salsa and the combo was great! 

Banana Bread (Gluten Free, Dairy Free, and almost sugar free)
I know I know this isn't following all the rules to my cleanse but it seemed to be a pretty healthy recipe so I thought I would try it out. Here is the recipe 

2 1/2 cups Brown Rice Flour
1/2 teaspoon Baking Soda
1/4 teaspoon Salt
1 1/2 teaspoon Baking Powder
1/2 teaspoon Cinnamon
1/2 cup chopped walnuts
2 Eggs, beaten
6 ripe Bananas, mashed
1/3 cup Honey
1 teaspoon Vanilla Extract
1/2 cup melted Coconut Oil
1. Preheat the oven to 350 and spray the bread pan that you are using.
2. In a bowl mix together the rice flour, baking soda, salt, baking powder, cinnamon, and chopped walnuts.  
3. In a different bowl mix together the eggs, mashed bananas, honey, vanilla, and coconut oil cream. 
4. Mix the too mixtures together and pour into the prepared bread pan.
5. Bake for 50-60 minutes or until a toothpick comes out clean. 
Once done and sliced I sprinkled some chocolate chips on top. 

Veggies and Rice
It gets hard coming up with creative things to eat while doing this cleanse. One thing that I have made a couple of times is vegetables and rice. This time here I cooked some brown rice up added soy sauce and garlic and served it with steamed vegetables on top. It actually was pretty tasty. 

And I got to spend time with some great friends!
