Healthieness...

Well the cleanse continues on… I have had really really good days and really really not so good days. This is so hard to do some days I have given in to some foods because I am being surrounded by foods that are so tempting all the time. But I am still proud of how I have done. I have been able to explore a lot of new foods that I would not have cooked otherwise. Here are some of the yummy things that I have made. 


Spicy Tomato Soup
All I did to make this was heat up a can of marinara sauce with some chicken broth. Tossed some carrots, beans, onions,garlic, and red pepper flakes. Let that simmer for 10-20 min and serve. It was pretty good. I normally don't like marinara sauce so I was surprised I liked the soup


Quinoa
I made this recipe up. I cooked the quinoa. Then in a separate pan I sauteed in olive oil some garlic, green onions, red peppers, and mushrooms. Added some salt and pepper. After sautéing for like 10 min I mixed the quinoa in it. It turned out good. That was my first time trying quinoa, it did have a different taste then I expected but it was still good. I served it with some delicious asparagus. 

Salad
This salad was simple. I mixed some lettuce, spinach,  cucumbers, olives, tomatoes, pinto beans, red peppers, and sunflower seeds. 

Honey Almonds
One day last week I was craving somethings sweet so badly. I had some honey but I couldn't decide on what I could eat the honey with. Then I found the Almonds in my cupboard. heated them up on the stove with some cinnamon and it was a perfectly divine treat that satisfied my sweet craving. 

Oatmeal....
My breakfasts usually consist of oatmeal or fruit. I enjoy mixing the two. It livens up the oatmeal. In this specific picture I mixed oatmeal with cup up apples. I cook it all together and it almost resembles a cobbler haha notice I used the word almost. 

Chinese Stir Fry
This was probably one of my favorite things I have made within the past week and a half. I love sweet and sour chicken so I tried to recreate something similar. I sauteed some red peppers, onions, carrots, added corn, peas, and pineapple. To make the sauce I mixed the pineapple juice with soy sauce and corn starch. It turned out so yummy. 

Along with eating healthy I have been working out a lot! I am still training for the half marathon in May. I have been feeling so great since I have been eating pretty healthy and exercising. I hope I can keep up these healthy habits the rest of my life!!

Day One

Today was the first day of my cleanse. It actually went very well. Since I had not gone grocery shopping yet my breakfast and lunch items were a little weak and simple but here is the breakdown...
Breakfast
1 Banana 
1/2 cup peaches
Snack
Dried pears
Lunch 
Broccoli 
Carrots
Almonds
Dinner
Quick and Spicy Tomato Soup 
Lettuce with Mushrooms tossed in olive oil with spices

I finally got to go grocery shopping this afternoon. I went to Winco, only my favorite grocery store. I feel like I save so much money every time I go there. I bought so many fruits, veggies, nuts, oats, etc. I was so excited to cook a yummy dinner when I got home. But first I went for a run. I haven't mentioned this yet but I am training for a half marathon that will be held in mid May. I missed running on Saturday so I had to make up for it today. So me and my Sister went running 8 miles! It actually was a great run and felt very good. So once I got back I made this delicious spicy tomato soup. I got the recipe off of foodnetwork.com and changed it up a little. Also, I took some pics but I didn't upload them tonight, so some other day I will upload. Here is the recipe for the soup. 

Spicy Tomato Soup(my version)
Ingredients:
1 Tbsp Olive oil
1 Carrot 
1/2 onion
1 clove of garlic
1/2 Can Marinara Sauce
14oz Chicken Broth
1/2 can pinto beans
red pepper flakes to taste
Salt 
Pepper

Sauté the carrots, onions, and garlic in a pot until soft.Add the Marinara sauce, chicken broth, beans, red pepper flakes, salt and pepper. simmer for 20 min.     

21 Day Challenge

Well it has been a great weekend. I went home to visit my family on Wednesday until Saturday. It was fun. I got to catch up with a couple of friends and just enjoy the company of my family that I don't get to see too often. Going home always leeds me to eat not too healthy. There is always chocolate sitting around, girl scout cookies, nutella(which is one of my favorite things), and lots of other junk. So as you can imagine I ate a lot of these things and i felt sooooo sick everyday from eating these things. As I was thinking about how sick I got I decided  I needed to make some changes in my eating habbits. As you can remember in January I ate no sugar. While I was doing that I felt so great! I never got sick like I do now. So as a result of me being sick and knowing that if I stopped eating sugar I would feel better I am deciding to do a cleanse. Now don't think this is one of those crazy cleanses that you only drink lemon juice, pepper, and syrup. I am doing a cleanse that consists of cutting out sugar, caffeen, dairy products, meat products, and carbs. So basically I am going to eat plant based foods such as fruits and vegetables, rice, nuts, beans, soy, and anyhting that doesnt include the above things. You may ask where I got such a crazy idea? Well it was about a year ago when I was at home watching Oprah. She had on this guest named Kathy Freston.
She is the writer of the book Quantum Wellness Cleanse: The 21-Day Essential Guide to Healing Your Mind, Body and Spirit. On this specific Oprah show she just talked about her book. Oprah took the challenge and did the 21 day cleanse. Now that I feel like I have been sick because of the foods I have been eating I decided I wanted to try this out. So here I go. I am starting tomorrow. I have researched some pretty good recipes that I am excited to try out. I have also been so sleepy all the time so I am excited to see if this helps me feel more energized. I know this is gonna be really hard for me but I can do it!!Goodbye Chocolate (my favorite thing in the world). Wish me luck!

Catching Up

So Basically it has been over 2 months since I have updated my blog and a lot has happened within those two months! So I am just giving you some photos and a quick update on what's been going on. We will start in January...




We went sledding/ hooky bobbing. It was a lot of fun but a little bit scary riding on a chair connected to two snowboards being pulled behind a truck...

Emma Got Married!



The roommates and I took a road trip down to Brigham City Utah for our Best Friends Wedding! Emma Ray was married to Jameson Sears on January 21, 2011. They were married in the Bountiful Temple. I am so happy for the two of them

We were busy doing some artwork! Melissa, Dawna, and I painted these birds and created this wonderful piece of Art that we now have hanging on our wall.

Cocoa Bean 


Dawna, Melissa and I LOVE the Cocoa Bean. We like to go on random runs to get our favorite cupcakes and Italian Sodas. My Favorite cupcake is the Chocolate raspberry Cheesecake cupcake. It is to die for!!

Cinnamon Rolls 

Some of the Delicious Cinnamon Rolls that I made for some of my best friends. The top cinnamon rolls are my Grandma Grigg's recipe. They were always my favorite and now I love to make them even though they never turn out as good as my grandmas. I miss her and this is one thing that helps me remember her. The bottom cinnamon rolls I received the recipe from a friend of mine. They are seriously my favorite cinnamon rolls I have ever had :)

Valentines Day 

Valentine cupcakes that I made. My mommy sent me a lovely Valentine package. It had a strawberry cupcake mix with frosting. I bought semi-sweet chocolate chips and melted them and created these lovely chocolate hearts and righting on to the cupcakes. It was so much fun 
                                                  
The lovely large valentines cookies that I made for my Valentine and form my roommates. I didn't have much time to decorate them so they didn't turn out that great. But I still thought they turned out pretty cute. 

The Lovely tulips my Valentine got me :) I was so happy to receive flowers on Valentines day. It was the first time a boy other then my daddy has given my flowers. They were so beautiful.

Happy Birthday To Me 

My Birthday happens to be in February. This was my first birthday away from home. It was a little bit sad not being with my family on this special day. My friends and sister did there best to make it a great day. My sister bought me a wonderful DQ ice-cream cake, which it to die for and my friend bought me a delicious Cocoa Bean cupcake. To celebrate my birth me and my besties went to dinner at a local Chinese restaurant. It ended up being an okay Birthday.

Mustache Mocktail Birthday Bash 











It wasn't only my Birthday during the month of February But it was also two of my best friends. My cousin Melissa's Birthday was on February 28, and Nicoles was on Valentines day. So since me and Melissa turned 21 this year we decided to have a combined birthday party. As of late we have become obsessed with mustaches and we wanted to have an event to get all dressed up and pretty for. So we combined the two and made it a mustache mocktail party. We made mocktails including scotch and sodas, Pina Coladas, Sea-breeze, and Sparkling cider. We also played some gambling games of Black Jack and Farkle. We had a blast! Thanks to all my Friends who came to celebrate our Birthdays with us.
